I can shed some light he.  The project speed is the playback rate, ie 24 fps, 23.98fps, 25 fps, your standard broadcast or film out fps.  The reason you would set the sensor speed differently is to therefore create over cranked or under cranked (slow motion or time-lapse) footage. 

Quick example.  If you set your camera to the following-
Project speed (playback): 24fps
Sensor speed : 60fps
Result: slow motion effect of 2.5x slow down (60/24)

On this topic, will custom LUTs show in play back for recorded 120fps Log C footage?

You will able to play back with looks applied in 5.0.
